Fruit  and Coconut Loaf

   

1 cup chopped dates

1 cup chopped dried apricots

1 cup Nestle Coconut powder

1 cup orange juice

2/3 cup brown sugar

1 � tsp bicarbonate of soda

� cup boiling water

2 eggs lightly beaten

� cups wholemeal SR flour

  cups wholemeal plain flour

1 tspn mixed spice.

 

Plain flour will do.

 

Combine first four ingredients, cover, ad stand overnight.  Add sugar, butter, bicarbonate soda, and water, to date mixture, combine well.  Stir in eggs, and sifted dry ingredients, spoon into greased and lined 15cm x 25cm loaf pan.

Bake in moderate oven 180deg 55-60 min.  cool slightly before removing from pan.
